FAVOURITE FREEKEH SALAD
COOK TIME: 25 MINS
PREP TIME: 5 MINS
Ingredients
• 1 tsp olive oil
• 1 cup Cracked Greenwheat Freekeh
• 2 1/2 cups water
• 1 small cucumber, chopped
• 6 cherry tomatoes, halved or quartered if large
• ¼ cup roughly chopped or torn basil
• Juice of 1 lemon
• Salt and pepper
Directions
• Heat the olive oil in a medium saucepan over medium heat.
• Add the freekeh and stir until fully coated, about 4 minutes.
• Add the water and bring to a simmer.
• Simmer until the water has reduced by half, about 10 minutes.
• Lower the heat, cover, and cook for another 10 minutes, or until the water is absorbed.
• Remove from the heat and rest, covered, for 5 minutes.
• Fluff with a fork.
• Transfer to a large bowl and cool.
